A couple weeks ago was Valentine’s Day and all things considered, it was a pretty fantastic day for me.
Went to the gym and trained with one of my oldest friends (“old” in terms of length of time we’ve been friends and actual age 😉 ), had lunch with him and his wife and then went home and cooked an amazing pot roast. The very same pot roast recipe you’re going to get today in fact.
Roasts fit perfectly in line with my personal recipe guidelines – extremely simple, very few ingredients, not a lot of prep or clean up & delicious – as well as easy to fit into the MacroSync Diet that we use at BOOM Bodyshaping.
This recipe has “optional” potatoes in it, so if you’re planning this for a post-workout meal go ahead and throw in the potatoes. If this is an “off day” for you, then just stick to the roast and vegetables, which is what I did even though it was a training day because we had a fairly big lunch.
On the spinach I like to use a simple 2-4 tbsp olive oil/balsamic vinegar mixture. You get some good fats from the olive oil and you leave out all the dangerous chemical fillers used in most salad dressings.
